Part of Peru’s culinary “holy trinity” (Aji Amarillo, garlic, red onion), this yellow chili pepper (orange as it matures) is a nice balance of heat and fruity flavor. Spruce Eats has a very nice write-up with recipes. Though orange when ripe, when cooked, it turns back to yellow. 90-100 days to maturity. Peppers grow to 5 inches and measure 30K – 50K Scollville Heat Units.
